What is a winstub, and what does it have to do with Granada? A winstub is a traditional wine tavern from Alsace, in eastern France, where regional food, wine and conversation are enjoyed in a relaxed, welcoming atmosphere. Winstub Granada began with the idea of bringing part of that food culture to Andalucía while respecting its Alsatian roots and finding a natural place in a city that already loves gathering around the table.
An Alsatian tradition around the table
The word winstub combines two German-origin words: Wein, wine, and Stube, a cosy room. There is no single decoration style or compulsory menu for every winstub. What matters is the connection with Alsace: its wines, regional recipes and informal hospitality that invites people to share a meal.
To learn more about the tradition, read our guide to what an Alsatian winstub is and how it connects to the region’s food culture.
The flavours of Alsace we want to bring to Granada
At the centre of the project will be Flammekueche, also known as tarte flambée: a thin, crisp speciality traditionally made with a creamy base, onion and lardons. Winstub Granada plans to serve it in its characteristic rectangular format, with a selection of classic versions and other combinations.
The concept also includes Alsatian Bretzels, cheeses and regional charcuterie, alongside wines from Alsace such as Riesling, Gewurztraminer, Pinot Gris and Pinot Noir, as well as Crémant d’Alsace. The final menu will be confirmed before opening.

From Strasbourg to Granada: a project in the making
Winstub Granada is founded by Alban Freytag, an Alsatian chef born in Strasbourg. His professional career has taken him to kitchens in several countries and to running a hospitality business in Benalmádena. This project brings that experience together with a personal connection to the food and traditions of Alsace.
The restaurant’s opening is planned for 2027. Winstub Granada is still in development; the final location and exact opening date will be announced once confirmed. In the meantime, read the story behind the project and follow its progress through the Winstub Granada blog.
Early opportunities to discover Alsace
Before the restaurant opens, occasional events offer a chance to share some regional flavours and introduce Alsatian food culture. One such event is A Taste of Alsace — Winstub Granada Tasting, planned for Friday 13 November 2026 at 20:00 at ANDA Cowork in Granada. The ticket price is €5, and the gathering is designed as an informal introduction to Alsatian wines and specialities.

The idea is simple: bring a little piece of Alsace to Granada, not as a copy of a Strasbourg restaurant, but as a new place with clear roots and its own identity. Born in Strasbourg. Inspired by Alsace. Adopted by Granada.
