What Is a Winstub?

If you have never been to an Alsatian Winstub, the easiest way to understand one is not as a formal French restaurant and not quite as a German beer hall. It is its own thing.

A Winstub is traditionally a welcoming wine tavern or neighbourhood restaurant: informal, warm, generous and closely connected to the food and wine of Alsace.

Where Alsace comes together

Alsace sits at a cultural crossroads. French and German influences have shaped its language, architecture, traditions and food. The result is a cuisine with a strong regional identity and a great respect for simple, satisfying dishes.

Wine is central to that identity. The vineyards run through some of the region's most famous towns and villages, including the area around Ribeauvillé where I trained as a chef. That connection between kitchen, vineyard and table is one of the things I wanted to carry into Winstub Granada.

It is about the atmosphere as much as the food

A Winstub should feel comfortable. You can come for a plate, a glass, a conversation or a long evening with friends. The food is there to be enjoyed, shared and discussed rather than treated as a ceremony.

That is why Flammekueche fits so naturally. It is thin, crisp, cooked quickly in a very hot oven and made for sharing. One arrives, then another, and suddenly the table is part of the meal.

Why bring a Winstub to Granada?

Because Granada understands this kind of hospitality. People here know how to meet friends, eat together, sit outside and let an evening develop naturally.

Winstub Granada is not an attempt to recreate Strasbourg in Spain. It is an Alsatian idea given a new home — keeping the spirit, the food and the hospitality while becoming part of Granada.
