Meet the Founder
From Strasbourg to Granada — with a lifetime in hospitality.
From Strasbourg to Granada
Born in Strasbourg, Alsace, the founder grew up with food and hospitality as part of everyday life. Alsace became both a professional foundation and a cultural one.
He trained as a chef in Ribeauvillé, in a Michelin-starred restaurant in the heart of Alsace’s food and wine country. His professional journey then took him to Baden-Baden in Germany, Hotel La Samanna in the French Caribbean, Switzerland, and eight years in Ireland.
Returning to Spain, he became chef-owner of The Temple Bar in Benalmádena, learning that a restaurant is about far more than food: service, atmosphere, people, consistency and giving guests a reason to come back.
Why Winstub Granada?
After moving to Granada, the idea became clear: connect where he came from with the place that is now home.
Winstub Granada brings the food and spirit of Alsace to a new setting, with Flammekueche at the centre, alongside Alsatian wines, Crémant, brezel, escargots, cheese, charcuterie and the relaxed, social atmosphere of a Winstub.
It is not about recreating Strasbourg in Granada. It is about taking something I know and love and giving it a new home.
Alsace
The professional and cultural foundation: food, wine, tradition and the Winstub spirit.
Granada
The adopted home: the city where this next chapter is being built.
The next chapter
The first goal is simple: find the right home, open properly and build a loyal local audience.
Building it from the ground up
Winstub Granada is a focused independent hospitality project, deliberately lean and designed to prove the concept first in Granada.
If the first Winstub proves the concept, the longer-term ambition is to adapt and replicate the model elsewhere in Andalusia. But first comes Granada.
Opening soon
Follow the beginning of Winstub Granada and be there as the next chapter takes shape.
