A great Flammekueche starts with the dough and the toppings, but it finishes in the oven. Choosing that oven is therefore one of the practical decisions that can shape the whole restaurant.
A German oven made for Flammekueche
For Winstub Granada, we are looking at a professional Flammekueche oven coming from Germany — specially made for the dish rather than simply adapting a standard oven to the job.
Why that matters
Flammekueche is thin, fast and unforgiving. The oven needs to deliver the right heat and consistency throughout service. A purpose-built Flammekueche oven gives us the right starting point for doing exactly that.
Why electric?
The project is looking for a practical setup with a small footprint and predictable requirements. That matters when you are designing a restaurant from an empty local or adapting an existing space.
The technical and licensing side still has to be checked properly before anything is installed. We are keeping the detailed equipment specifications private until the project is further along.
The oven affects everything
Its size influences the kitchen layout. Its output influences service speed. And its cooking performance influences the most important thing of all: what arrives at the table.
We are therefore treating the oven as part of the restaurant design, not simply another piece of equipment.
Still building
The final equipment list will be confirmed as the premises and technical requirements become clearer. But one thing is already clear: if Winstub Granada is going to serve proper Flammekueche, the oven needs to be built around the dish.
