Opening Winstub Granada is not just about what goes on the plate. Before the first Flammekueche can leave the oven, we need the right place to welcome people.
What makes the right place?
We are looking for somewhere in Granada where the restaurant can feel like a real neighbourhood Winstub: warm, relaxed and easy to walk into.
There are a few things that matter from the beginning. A terrace is important. So is the atmosphere of the street, the surrounding neighbourhood, access for suppliers and the possibility of creating a small dining room that feels genuinely Alsatian without feeling like a theme park.
More than four walls
The local has to work for the kitchen, the service and the guests. It needs the right licence situation, enough practical space and a layout that makes sense for a small restaurant.
We are also looking carefully at what already exists in a property. Sometimes an empty local gives us the freedom to build the right atmosphere from scratch. Sometimes an existing restaurant can make the practical side easier. Every place has its own story.
Granada matters
Winstub Granada is being built for Granada, not simply placed in Granada. The final location will influence the terrace, the flow of service, the atmosphere and the people who discover us first.
We are taking our time to find a place where Alsace and Granada can genuinely meet.
