Opening Winstub Granada is the story of building a little piece of Alsace in the heart of Granada — from the first idea to the day we finally open the doors.
So where did the idea come from?
It started in Strasbourg
Winstub Granada begins in Strasbourg, where Alsace food and hospitality are part of everyday life. A Winstub is more than a restaurant. It is a place to eat simply, drink well, meet friends and stay a little longer.
And at the centre of that Alsatian table is Flammekueche: thin, rectangular, baked hot and fast, with a creamy base and classic toppings. It is one of the foods that immediately feels like home.
Then came Granada
After years working in hospitality in different countries, the idea of bringing that spirit to Granada became harder and harder to ignore.
Granada has its own food culture, its own rhythm and its own way of bringing people together around a table. Winstub Granada is not about copying Alsace somewhere else. It is about bringing a genuine Alsatian tradition into a city that already understands the pleasure of good food, good wine and good company.
Why a Winstub?
Because the name says a lot about what we want the place to feel like.
Warm, informal, welcoming and centred on the table. A place for a quick Flammekueche and a beer, a bottle of Crémant with friends, an Alsatian lunch, or simply a relaxed evening.
The food will be rooted in Alsace. The welcome will be in Granada. And the restaurant itself will be something new: Born in Strasbourg. Inspired by Alsace. Adopted by Granada.
This is only the beginning
Winstub Granada is planned to open in 2027. Before that happens, there is a lot to build: finding the right place, shaping the menu, choosing the equipment, meeting suppliers, preparing the terrace and bringing the whole idea together.
That is what this series will follow — the real journey of opening Winstub Granada, one step at a time.
